French Toast Sticks


As you might already know, today kicks off a new month long series called 31 days of freezer cooking. I've talked a little bit about it lately and I hope you're as excited as I am! In anticipation of going back to work outside the home, I am working hard to fill my freezer with ready made meals of all sorts this month.

But it won't be just a bunch of calorie laden casseroles, that's not all freezer cooking is about. I think some are a little standoffish when it comes to make-ahead meals because of that reason. I hope to show you otherwise, you can have healthy dishes made ahead of time that both taste great and use wholesome ingredients.

 
So what's in store for July? Variety for sure. Plenty of breakfast options like these easy french toast sticks, dinner ideas such as homemade frozen pizzas, pretzel bites for snacks and how about flavorful summer veggies made in the slow cooker? It's going to be tons of fun the whole month long, so let's get started!

French toast is a favorite in our house, especially with the hubby. He loves it. The girls always devour these little hand held sticks when I make them so they had to make an appearance.


I can save some time and money by preparing a large batch of these on the weekend and freezing them to use throughout the week...if they even make it that far. I recommend using Texas toast, it's thicker than regular bread and perfect for these sticks. No more spending two-three dollars for a box in the frozen food section.

Now you've got an easy breakfast for those rushed mornings. Just pop a few sticks in the toaster, toaster oven or microwave and serve with maple syrup and fruit. The kids will love you for this one!



French Toast Sticks

Ingredients:
10 slices Texas toast
4 eggs
2/3 cup milk
1 tsp vanilla
1 tsp cinnamon
butter, optional

Directions:
Begin by slicing each piece of bread into four sticks and set aside.

Mix together in a large bowl, eggs, milk, vanilla and cinnamon until well combined. Heat 1 tbsp of butter over medium heat in a skillet.

Begin dunking each slice of bread into egg/milk mixture and placing into the heated skillet. Let cook on each side until browned. When done remove and place onto a plate and repeat with remaining sticks.

Once cooked and all cooled, line a large cookie sheet with parchment paper. Place each stick on sheet and place in the freezer for about one hour or until frozen. Then remove and transfer to a large gallon sized freezer bag. Make sure to label with contents and date. Try to remove as much air as possible from bag to prevent freezer burn. Store in freezer until ready to use.

When ready to serve, remove desired number of sticks and heat in toaster. Makes 40 french toast sticks.

    1. They probably would be okay for a longer period, but I would use up within 3 months.

  5. When you place them in the freezer for an hour, are they covered?

    1. I don't cover them when I'm flash freezing on a pan. After they're frozen then you will transfer them to a Ziploc bag for the freezer.
