Fruit Slush Cups


Well happy fourth of July! Besides being an important holiday for our country, it's also my hubby's birthday. We're enjoying some extra time off together as a family and keeping things pretty low key. Planning to enjoy a little pool time this afternoon and later grilling for supper. Definitely enjoying these perfect 70 degree temps, lots of sunshine and no rain in sight!

I have a couple little girls begging to eat one of these fruit cups today so we'll make sure to include that in our dinner plans. These are perfect treats for the warmer months and my little fruit lovers! Simply just a mixture of fresh and canned fruits, no added sugars at all. My kind of treat for them to enjoy, the fruit is plenty sweet so they'll feel like they're having a dessert.



The juice from the pineapple provides the perfect amount of liquid and the mixture becomes slushy when thawing. Sort of like a popsicle, only healthier. Feel free to use any sort of fruit you have on hand, mix and match what your family likes. Frozen fruit will even work, I would recommend thawing the fruit just a little bit before mixing. That might make it a little easier to combine all ingredients. I can't wait for you to give these a try, I think you'll love them just as much as we do!



Fruit Slush Cups

Ingredients:
2 large bananas, sliced
20 oz. can crushed pineapple {do not drain}
14.5 oz. can mandarin oranges, drained
2 cups fresh strawberries, halved or quartered depending on size
1 cup fresh blueberries

Directions:
In a large bowl, combine sliced bananas, pineapple with juice, oranges, strawberries and blueberries. Carefully mix together to combine all ingredients.

Spoon fruit mixture into the wells of a regular sized muffin pan. Place pans in the freezer for at least two-three hours, until fruit is frozen. Then taking a butter knife, remove cups from the pan. They should pop out very easily.

Immediately transfer cups to freezer bags or large storage containers. If using containers, you'll probably want to add parchment paper in between layers of fruit cups. Store in freezer until ready to eat.

When ready to eat, remove desired number of fruit cups and let thaw for a few minutes before enjoying. Makes 16 cups.
