Honey Roasted Peanut Butter


I love making my own nut butters, whether it be almond butter or a peanut butter like this one. I'm not against purchasing a jar from the store but I really do think it tastes so much better homemade.

It's really quite one of the easiest things ever too. By simply dumping one to two cups of nuts in a food processor (or I bet a blender will work just fine) and grinding them up for several minutes will result in this wonderful concoction. Get the kids involved too, they will love watching!


Speaking of kids, they will also love these little apple sandwiches. We've been making these for snacks around here, I even like them myself. I'm not big on peanut butter and jelly sandwiches but something about slathering some peanut butter in between apples is just delicious!

They're really easy to make, you'll just need to slice the apple into circles, you should be able to get 2 whole sandwiches out of one apple. Take either a very small round cookie cutter or use a knife to remove the core in the middle. Then spread with your desired nut butter and sandwich the two apples together. You can also add raisins if you'd like.

Honey Roasted Peanut Butter

Ingredients:
2 cups dry roasted peanuts
2 tbsp honey
Pinch of salt (optional)

Directions:
Add peanuts, honey and salt to food processor; secure with lid. Process for several minutes until peanut butter reaches your desired consistency.

I had mine going for about 10 mins, it's really creamy. If you like yours thicker then 5-6 mins might be all you'll process it for. Play around with it and see what you like best.

Makes about 2 cups. Store in an air tight container and keep in fridge, should keep for about 2 months.
